CranBerry
MeatBalls

Ingredients
-
1-2 lbs. ground pork OR maple sausage
-
1 bag fresh or frozen cranberries
-
½ onion, minced
-
3 cloves garlic, minced
-
1 6 oz. can tomato paste
-
1 cup orange juice
-
½ cup (may need more) broth (water can work in a pinch but will not provide extra flavor)
-
¼-½ cup maple syrup OR coconut sugar
-
Salt, pepper, cinnamon, nutmeg, ginger
Directions
-
Place pork, 1/3 bag of cranberries, onions, garlic, salt, pepper, cinnamon, nutmeg and ginger in a large bowl. Mix with your hand and knead well.
-
Turn oven to 350. Grease a baking sheet or two.
-
Form meat mixture into medium or small balls. Place on baking sheet.
-
Place in oven and allow to bake for about 15-25 min.
-
While meat balls are baking combine the rest of the cranberries with the tomato paste, orange juice, broth (or water if using), maple syrup (or coconut sugar), salt, pepper, cinnamon, nutmeg, and ginger in a blender or food processor. Process until well blended (the cranberries shouldn’t be recognizable). Place sauce into a skillet or sauce pan over med. Low heat and cook, stirring occasionally for about 20 min. Feel free to add some more liquid if this thickens too much for you.
-
When meat balls are well browned remove from oven.
-
You can heat these up in a dutch oven in the oven or on the stove top OR you can do as we do in our home and keep them warm in a crock pot while we eat our appetizers. Whichever method of warming you use: place sauce in the container you will be heating them in and then carefully add the meatballs. Stir gently.
-
Allow to heat on a low temp. until ready to serve OR keep on low (then switch to warm after well heated) in crock pot. Serve warm.
