Middle Eastern Ovine/Beef Patties w/ Yogurt Sauce

These are easy and different. A fresh take on a "burger" and yes, try to skip the bun! How about with some pitas, or couscous, or rice? Don't be lazy and skip the yogurt sauce! It adds FANTASTIC flavor to this delicious patty.

I get asked all the time how to make good pate. It's very simple and so nutritious that it should be a staple in everyone's diet! Here are all the secrets.

This is a staple in our family for several years now. We serve it as an appetizer during the holidays. It’s easy, affordable, and delicious, all the ingredients to a good holiday dish! And, if it’s the case that you’ve never had FRESH cranberries, this is a GREAT way to consume them. Don’t forget that cranberries are full of vitamin C and are prebiotic which aides in the health of your gut biome!

This is our "go to" recipe for ANY roast. It comes out perfect EVERY time. Remeber the MAIN thing here is to NEVER use salt during the slow cooking process! Add your salt when the meat is done or to the gravy/sauce you may choose to use. Also, the leftovers OR the finished roast is perfect for meat salads, Tacos, Burritos, on bread/sandwiches and MANY other things, so don't limit yourself to pot roast (although that's always great too) branch out! And save the leftover cooking juices to use in the gravy or for other uses.

This is one of my all time favorite ways to make large pieces of meat when it is hot outside. You have to have a charcoal grill for this one, but keeping a low price charcoal grill around just for recipes like this is a great idea for when you want slow cooked items during the hot months but don't want to keep you house hot. You can use any large chunk of meat, with OR without bones from any animal. As a quick important side note, you should try to keep some parchment paper and/or large/x-tra large paper bags around for grilling. Why? Because that way you don't have to allow aluminum to touch your food!

Below you will find a Goat Curry done two ways. The end result is a little different depending on which you choose. BOTH are delicious. The "easy" version is just that but also flavorful and tender. The "fancy" version is a little more authentic and flavorful, it takes a little more time but is just the ticket to impress your guests for a dinner party or holiday. But, I wouldn't say it was too difficult for a regular nights' meal. So, take your pick, regardless of which you choose, you are going to get a fantastic meal that is sure to hit the spot when you are craving curry!
