Slow Grilled Roast

Ingredients

  • Roast (or other large chunk of meat such as shank, legs, etc.)

  • Seasoning of choice (NO SALT HERE!)

  • Salt (for LATER application)

Directions

  1. Season roast (or other large chunk of meat) well, BUT NO SALT!

  2. Wrap meat in parchment paper or place in brown paper bag and wrap this tightly in aluminum foil.**

  3. Heat Charcoal Grill with an abundance of coals (and wood if you would like) and allow to grey evenly (it’s ok if it’s a little on the hot side to begin with).

  4. Once coals are greyed carefully push them to one side of the grill. Place a heat proof med. size bowl or pot of water on the opposite side of the coals and then place cooking grid (i.e. the metal part that you place items on to cook) on top as normal.

  5. Place meat on the side of the grill where it will have the container of water underneath it.

  6. Close bottom until only a little air can come through, close top until only a sliver of air can get through and allow to slow grill for 6 hrs.

  7. After 6 hrs. have passed check your grill and see if all or most of the coals have burnt out. Remove the meat carefully (hot juices may spill out!) and place on a baking sheet while you do this. It’s ok to start the coals again and let them get hot and then place meat back immediately (also check the water here because it may have evaporated, add more if it has…) Make sure you leave only a thin sliver of air flow on top and bottom.

  8. When you place the meat back on flip it on its opposite side this time. Allow to slow grill for another 3-6 hrs. If you want a crispier more done outside the last 20 min. you can unwrap (carefully! Over a dish to collect hot juices) and place directly on the grill (coal side) for 10min. then flip on other side for 10 min. more (but you DO risk the tender meat falling off!)

  9. When time has passed remove from grill carefully and make sure to open pkg. over a dish to catch hot liquids (which you can retain for other uses) and allow to rest for 10 min. before serving. Remember to add salt before serving or as you serve!

**I suggest using parchment or brown paper here because aluminum foil touching your food contaminates it with aluminum. This way you can have the benefits of a heat proof covering while at the same time not allowing it to actually touch and contaminate your food!
